What is the difference between distilled liquor and fermenter liquor

Distilled liquor is a high-alcohol liquor extracted from fermented brewing materials through one or more distillation processes. The raw materials of distilled spirits are generally rich in natural sugars or starches that are easily converted into sugars,such as honey, sugar cane, sugar beet, fruit and corn, sorghum, rice, wheat potato, etc. Sugar and starch are fermented by yeast to produce alcohol, and then use a special distiller to heat the liquor. Using the different boiling point of alcohol (78.5°C) and the boiling point of water (100°C) , the original fermentation broth is heated to between the boiling points of the two , then you can steam out and collect alcohol and aroma substances from it. However, during the heating process, the moisture and other substances of the raw materials will also be mixed in the alcohol, thus forming liquors of different quality. Most of the famous wines use multiple distillation methods to obtain liquor with high purity and low impurity content.

Brandy, whiskey, rum, vodka, gin, tequila, and Chinese liquor are all distilled spirits, and most of them are spirits with higher degrees. The production process is to first brew, then distill and then cool, and finally get a high alcohol solution beverage. Generally the alcohol content of brewed alcohol is less than 20%. Distilled spirits can reach more than 60%. Distilled spirits in our country are mainly obtained by distillation after brewing from grain raw materials.


Distilled wine can be stored for a long time at room temperature due to its high alcohol content and low impurity content. Generally, it can be stored for 5-10 years. Even after opening the bottle, it can be stored for more than one year without deterioration. Therefore, in bars, spirits can be sold in bulk, mixed and even opened frequently without considering whether it deteriorates quickly.

So what is the difference between fermented liquor and distilled liquor?

1. Taste difference: The taste of fermented liquor and distilled liquor are different. The purity of distilled liquor is relatively high, so it is more difficult to swallow, and it has a spicy throat, and it has a lot of stamina; Most of fermented liquor is an alcoholic beverage with a unique flavor and low alcohol content, which can create an atmosphere.

 

2. Process difference: Distilled liquor is obtained by separating the original liquor of alcohol from the water by using the different boiling points of alcohol and water. This requires special distillation equipment. Distilled liquor has a high alcohol content after purification.Fermentation liquor is an alcoholic beverage produced by cellaring over a period of time, which is not strong.


3.Taste difference: Distilled liquor has high alcohol content, so it tastes very spicy, while fermented liquor has a unique flavor.
