How does temperature affect fermentation?


Temperature has a direct effect on fermentation. When it's warm, yeast produces more alcohol and less carbon dioxide. In hot weather, fermentation can be faster and more intense, leading to problems like airlock leaks and even explosions. However, when it's cold, yeast produces less alcohol and more carbon dioxide.


Keeping the temperature within a certain range is critical to maintaining a steady fermentation rate. For most yeasts, this range is 68-72 degrees Fahrenheit (about 19-22 degrees Celsius).
