Vodkas are mostly distilled from grains such as sorghum, corn, rye or wheat, and are made through mashing - fermentation - distillation - filtration - dilution - blending.
The distiller is responsible for distilling the vodka and directing its filtration, which includes removing the front spray, heads, and tails. These components of the distillate contain flavor compounds such as ethyl acetate and ethyl lactate as well as impurities that affect the often desired clean taste of vodka. Through multiple rounds of distillation, or using fractional distillation, the flavor is altered and clarity is added.
Vodka uses a continuous still, which is also known as a tower still. The definition of a tower still is very simple. . Their outer structure is mainly cylindrical in shape.
