Technical Principles
The whole process of beer brewing mainly includes: raw material preparation, saccharification, filtration, boiling, cooling, fermentation, maturation, filtration/filling and other core links. Each link corresponds to a complete set of equipment systems that work together. The following is a brief description of the key systems and principles:
1. Saccharification system (Brewhouse)
The saccharification system is a thermochemical process that converts starch in malt into fermentable sugars. The main equipment includes:
Malt crusher
Mash Tun
Lauter Tun
Kettle
Whirlpool
Working principle:
Malt and water undergo enzymatic reaction in the saccharification pot, and starch is hydrolyzed into maltose and dextrin through temperature control. The saccharification liquid separates the spent grains through the filter tank, then enters the boiling pot for hop boiling and sterilization, and then enters the whirlpool to precipitate protein and coagulants.
2. Cooling system
The boiled hot wort needs to be quickly cooled to the fermentation temperature (usually between 10℃~20℃) for yeast inoculation. We use plate heat exchanger + ice water system to achieve two-stage rapid cooling.
3. Fermentation system
The fermenter is the core link in the formation of beer taste and body. System configuration includes:
Fermenter (vertical/horizontal, cone bottom design)
Temperature control jacket and insulation layer
Automatic temperature control, pressure regulation, CIP cleaning device
Working principle:
After the wort is mixed with yeast, the yeast converts sugar into alcohol and carbon dioxide, and forms flavor substances such as esters and alcohols. The time is generally 7-21 days, depending on the type of beer (lager/ale).
4. Wine storage/maturing system
After fermentation, beer needs to be matured at a lower temperature (0℃~4℃) to settle impurities, stabilize flavor and improve clarity.
5. Cleaning and control system
The whole set of equipment is equipped with a CIP cleaning system (acid washing + alkali washing + hot water circulation), and the PLC control system realizes process automation management.
