Just like a good beekeeper takes care of his bees and keeps his bees healthy to produce good honey, a good brewer will take care of his yeast and keep his yeast happy. This is the first and most important step in making outstanding spirits, and it is absolutely essential to the art behind our microbrewery craftsmanship.
Happy yeast extracts sugar from fruits and grains and breaks them down into carbon dioxide and alcohol. This process is called fermentation, and it is the first step in making any spirits and the only step in making alcohol.
After the yeast finishes its work, the distiller will leave a "washing liquid" with an alcohol content of about 10%. In order to turn this washing into one spirit or another, the art of distillation is necessary.
Distillation is usually carried out in one of two ways, either continuously in a large industrial-scale distiller, or batchwise in a small manual distiller. Large continuous distiller is very suitable for making pure neutral spirits, such as vodka, while small batch distiller is very suitable for making whiskey and brandy and other flavored spirits. Santa Spirits uses two types of distiller, depending on the desired flavor: batch distiller for whiskey and apple brandy, and continuous distiller and batch distiller for vodka and gin.
After the distillation is complete, the spirits may be bottled immediately, or they may need to be aged. All the spirit comes from being still crystal clear; spirits like whiskey and brandy can only gain color through subsequent barrel aging. The choice of barrels is very important: smaller barrels produce a more spicy, oaky taste, while larger barrels produce a richer, more complex taste.

We can customize the distiller according to your needs, with any size boiler or column diameter. The column and condenser can be made of copper or stainless steel according to your needs.
The picture above is our jacketed, steam heated and 500L copper gin distillation equipment. These 500 liter stills can be heated by a low pressure steam boiler or our optional electric independent oil bath heating system. This type of distiller is perfect for stripping gin, rum, brandy, moonshine and whiskey.
