A distillation column is a basic item used in the distillation of liquid mixtures in order to separate the mixture into its constituent parts or fractions based on differences in volatility. The purpose of a distillation column is to separate compounds containing two or more miscible solutions by the change in their respective boiling points.

The vapor contacts the bubble cap inside the column; this causes the vapor to condense back into the liquid. The liquid drips down through the column and is eventually forced up through the lid and plate. Each plate contains a copper blister and a sight glass, a CIP ball, a drain valve, etc.

Hot steam enters the downspout from above, exits at the bottom of the downspout, rises up, passes through the plant tray, and exits through the horizontal pipe at the top.

The gin basket allows the use of botanical ingredients in the steam path, resulting in a very clean top end product.
