Barley storage: The newly harvested barley has a dormant period and low germination ability, so it must be stored and matured.
Barley selection: Use wind and sieve to remove debris, and classify according to the size of the wheat grains.
Barley soaking: Soak the barley with water for 2 to 3 days in the soaking tank, and wash it at the same time to remove the floating barley, so that the water soaking degree of barley reaches 42~48%.
Germination: The barley soaked in water will germinate under temperature-controlled and ventilated conditions to form a variety of materials to dissolve the content of the wheat grains. The suitable temperature for germination is 13-18°C, the germination cycle is 4-6 days, and the elongation of root buds is 1 to 1.5 times the grain length. The grown wet malt is called green malt.
Roasting: The purpose is to reduce the water content, stop the growth and decomposition of green malt for long-term storage; make the malt form a substance that gives beer color, aroma and taste; easy to remove the root buds, and the moisture content of the malt after roasting is 3~5 %.
Storage: The roasted malt is stored in a concrete or metal silo after removing the roots, selecting it, and cooling it.
