Column Distiller Making Whiskey Gin

7 questions when buying a still

When choosing the best configuration for your custom distiller (the main tool of your process), it is best to do your homework and understand what equipment you want, need, and why.

1. What spirits will you make?

The spirits you produce are the cornerstone of static design, but every spirit has rules that must be followed. That being said, you have many choices about how to achieve these expected results. A good example is bourbon, which must be distilled from fermented grains only, of which at least 51% must be corn. Bourbon must be distilled at 160 degrees or below and barreled at 125 degrees or below in new charred oak containers. On the other hand, if you decide to also produce vodka, vodka can be distilled from any material with an alcohol content of 95% or higher (190 standard alcohol) and must not be bottled under 80 standard alcohol. After considering these details, you must decide the preferred distillation method for each product.

2. What process do you prefer to use when making spirits?

Continue to take bourbon and vodka as examples, because they are usually distilled using different processes on a process scale. Do you prefer to distill your bourbon, and if so, how many times? Or maybe you like a single pass through the coated column, or you want to try to catch up with the big shots and use a continuous distillation process? You can combine these processes, or use specific processes for different SKUs or products. On the vodka side of the world, tank distillation may be too inefficient, and intermittent or continuous columns must be used.

3. How many products will the distiller produce and in what time frame?

The expected output is the best indicator to determine the size of the required equipment. This applies to stills and all auxiliary equipment-saccharification, fermentation, storage, mixing, bottling, etc. By starting from the required output and schedule, we can effectively adjust the dimensions of all equipment from the distiller, the production center, and the start of the work in two directions from there. Bottlenecks in production may occur anywhere in the supply chain and process chain, but if the size is too small, this may be the most difficult obstacle to overcome.

4. What are the space requirements for the distiller and supporting equipment?

Now that you have decided what products to manufacture, how to manufacture them, and have figured out what size equipment you need, the next step is to decide where to go for the still. Usually, a still is considered a beautiful display or the focus of attention, but it is also a key part of the production process, where accessibility and usability are the most important. The center of attention is good, but first it must fit the space. Do you have a ceiling height to accommodate 18 feet of vodka column?

5. What infrastructure is required to operate the distiller effectively?

When installing the infrastructure for the distiller, it is divided into simple categories, heating and cooling. Clear communication with the manufacturer is essential. Make sure everyone is on the same page and the numbers are valid. The first is heating. Without heating, you will not be able to distill anything. What is your heat source, steam, electricity, or some form of direct flame? Each heating system requires different infrastructure and has different safety priorities. If you want to use electricity for heating, does the building have enough electricity to properly heat the system you want to purchase. The spirit of vaporization without the ability to condense and collect is meaningless. How will you cool your products? Likewise, you will have some choices regarding cooling protocols, processing numbers and plans according to your process. You are likely to use these same heating and cooling systems for other parts of the process, such as saccharification and fermentation.

6. How important is static aesthetics to you?

We are all human beings, and whether we like it or not, we are all consumers-priorities and preferences can vary greatly. As mentioned earlier, the distiller is usually a display or a functional artwork; the entire winery is built around the concept of tourism and tourist experience. In these cases, the distiller is almost always experienced after the spirits themselves. Main focus. In these cases, the wow factor is necessary, but on the other hand, many wineries regard the still as another tool used by the winemaker. In these cases, as long as they can produce the desired quality and quantity of the distiller, the distiller may be of little or no meaning to the operator.

7. What is your budget?

The distiller is one of the most important components of a winery. You should purchase the distillation equipment that best achieves your product goals, but don’t forget to consider your financial goals. Once you decide what you want to produce and how much to produce, you need to consider other variable costs, such as raw materials and bottles. These numbers will vary depending on the size of the still you purchase. The budget doesn't stop there. Rent, electricity (especially if you use electricity for heating and cooling), and any other expenses should be included in your budget.

For anyone who wants to improve their hobbies, the best advice is to do research! Research all the aspects needed to open a winery and keep it running-from what type of spirits you like to make, to whether you want a more beautiful winery, to the utility cost zone of the downtown warehouse. This is one of the times when too much research is impossible! If you have more questions, please call us, we will be happy to discuss your needs for the winery and help you put the still in the right place in the book!
